#1 Egg Muffins

Change up the flavor by adding your favorites meats and veggies, or try our variation with sweet potato.

#2 Amish oatmeal

This baked oatmeal is a great option for the whole family. Top with you favorite fruit and nuts. To add extra protein, add in Bubb’s Collagen when cooking. This increases the protein to 24 grams of protein per 200 grams. 

#3 Meatloaf Muffins

At my house, we are huge fans of muffin tins. These delicious meatloaves are great reheated. Pair with roasted veggies and mashed cauliflower for a balanced meal!

#4 Pulled Chicken

This is one of the most versatile recipes we have. You can put it over a sweet potato or make a Mexican bowl.

Tuesday Thoughts…

Sunday I had my 53rd birthday…holy smokes, where did that come from?? See, in my mind I think I’m still in my 30’s (although my body doesn’t agree some days 😉 ). Your mindset is soooo powerful in how your perceive your life to be.

If you have the wrong attitude about things going on your life, like “I’m never going to be able to get out of debt…”, “I’m never going to be able to lose weight…”, or “I’m never going to be able to find my dream job…” Chances are, you never will!

You can’t wait for the perfect moment to start something because life is never perfect, things might be good, but it’s never perfect. It takes baby steps in order for you to start something and one needs to realize anything that is a daunting task will be a marathon and not a sprint.

We tell our fitness and nutrition clients NOT to expect drastic weight loss overnight or even in 30 days because we want them to establish healthy habits in order to succeed. Think about all of the gimmicks out there where you can lose 10# in 10 days…how healthy do you think that is? Or “drink this drink for 30 days and watch the scale plummet!”…these things are not teaching you how to eat a balanced diet.

This is just my opinion, but whatever is natural should be the things that should be consumed. If it wasn’t made by God and from the earth, then most likely it isn’t good for your body. Now don’t get me wrong, I will consume things here and there that are not natural, but I have a good sense of how to eat. (Even though sometimes I indulge…but that’s okay because that is life!)

The important thing to remember here is that there will be ups and downs in one’s fitness/health journey, but if you know how to get back on track and WANT to get back on track, then there are ways to get there! Transformation Tuesday!

Janet Land

I want to be like Janet when I grow up!! Janet started with CrossFit Unstoppable in 2021 with her daughter, Jessica in our “boot camp” program and then eventually moved to regular CrossFit classes.

After a bit of time, Janet took some time off of CF, but just recently (12/28/20 to be exact) responded again to a post I had made about nutrition coaching, weight loss and online coaching. And here we are! 4# down, 1.5% body fat lost and an amazing 7.25″ GONE. In just 5 weeks with nutrition coaching and online remote coaching that is offered by CrossFit Unstoppable!

Super Bowl Weekend!

Go Chiefs!! 🙂

Super Bowl “Weekend” is usually a big deal to most people; particularly when the Kansas City Chiefs are playing for their 2nd straight title!

Wanted to throw out some tips and tricks to manage it through the day tomorrow without overindulging and derailing your previous weeks progress! There ARE ways to have a good time AND be healthy!

*Go with a Game Plan

*Don’t stand by the food table

*Offer to bring a healthy option to a party

*Beware of what you are drinking-stick with water or have a water in between drinks

*Skip the chips and go for the veggies

*Be mindful – Are you eating because you are hungry or bored?

Heading into September…

Blink…Yep, August is almost gone; how did that happen?? I’m sure everyone has those weeks where you think, “How did Friday get here so fast?” I mean you’re happy and all, but what just happened?

Most people this past week sent their kiddos back to school after being out for nearly 5 months…Stress is in the air…There’s tension and perhaps a little bit of chaos going around in homes these days – more so than usual.

If you are a bit stressed about how these next weeks are going to go, I want you to do this – Focus on what you CAN control!

  • Sleep-Try to shoot for 7-8 hours each night; more for your kids!
  • Meals-Make a list of meals you would like to have in the evenings during the week – meal prep for a couple hours during a wkd afternoon. Prepare healthy snacks for your kids to grab and go instead of having them reach for junk (same for you 😉 ) Our site now has tons of recipes!
  • MOVE – Even if you can only get a 20 minute walk in during the day, perhaps get up 20min earlier or walk on one of your breaks – it will do your body and mind good!
  • Focus on the positive – stay off of social media that causes stress

What’s the Plan??

Who out there meal preps? I used to consistently on Sunday afternoons, but have got a bit lazy and just rely on what’s in the fridge, cabinets or maybe takeout (as healthy as possible!). I’m going to try and get back in the groove these next few weeks and FOCUS on a Plan!

I know this, but why don’t I follow through? Because I lack the structure and accountability. I think I mentioned the other day (heck, it may have been yesterday-it’s been a long day!) that I was going to be participating in a meal prep workshop so hopefully I can help you all out as well with the knowledge that I gain.

I think the first thing we need to look at when thinking about meal prepping is blocking off a time where you can spend at least 2 hours in the kitchen (I try to spend a bit less bc of my schedule and I’m not a fancy dancy cook 😉 ) So you’ve got Sunday afternoon blocked off in your calendar…Next up, what are you going to make? You need a shopping list, right? Do you go to the store, send your spouse/kids or do you have it delivered? I like to go myself so I know what I’m getting!

Plan on having 2 different proteins (lean meats, chicken, fish) and a couple of sides then some fresh veggies and fruit that is already cut up and easier to grab and go. I rarely use the 3-compartment containers but they are very handy! Especially if you don’t mind eating the same thing over and over. You can easily bake some chicken in the oven while you are preparing some rice or sweet potatoes (starchy carbs) and cutting/dicing up veggies. All of this can be prepped in those 2 hours; placed in your containers and you are good to go for a few days!

Again, this takes PLANNING! I don’t know about you but if I go to a store when I’m hungry, I tend to buy things that I shouldn’t! Write out your list of things you’d like to try throughout the week, shop on Friday or Saturday then prep away on Sunday! That’s my plan anyway!

This week I’m prepping some egg muffins for breakfast, some protein pancakes and baked chicken. I buy the big bags of Birds-Eye veggies and steam 3-4 servings and portion out when I’m ready. I also like to have apples on hand for a quick carb and frozen fruit available for a quick smoothie in the blender.

So, make that list and PLAN on succeeding this week with your meal prep! I’ll keep you posted on how I’m doing either on here or my CFU Facebook page or IG.
